This course is open to anyone with an interest in catering and is aged 19 and over. Through interactive demonstration and hands on practical learning this course provides the foundation to those that want to gain a basic understanding of the principals of making country breads.

This course is free, however there is a small fee of £10 to cover ingredients and teaching materials.

  What You Will Learn

Pain de campagne ("country bread" in French), also called "French Country Bread" is typically a large round loaf made from either natural leavening or baker's yeast. It is essentially a sourdough, but made a little bit more special with a touch of rye and whole wheat. It needs a little patience, but not much effort, and the wonderfully flavourful loaf is most definitely worth it!

These courses could lead onto enrolment on one of our other bread making courses or to progression on to the Culinary skills Diploma Level 2 and then onto the Cookery Diploma Level 3.

Going to college gave me the tools to travel around the world and to work with and teach different nationalities. I would highly recommend it and cruise ships are a great way to do what you love whilst seeing different countries. "

Level 3 will help you develop and refine your essential skills, building on your culinary foundations to take your cookery to a higher level with more complex techniques and dishes. You will also study the nutritional values of foods and ingredients, management and supervisory skills, successful kitchen management and how to store, prepare and cook food safely. The qualification enables learners to develop knowledge, understanding and skills essential for working in a food environment and working with others, improving their own performance. As a nationally recognised Centre of Excellence in three disciplines, and AA Highly Commended College Rosette Restaurant winner, there really is nowhere, better to study catering and hospitality. This course is ideal if: You wish to study “Kitchen & Larder” and develop your practical skills in butchery and fish preparation, and learn how to cook and finish a number of complex dishes using meat, fish and shellfish, as well as vegetarian dishes.

Learn from our experienced team how to get the best from plant-based dishes and create flavoursome and exciting new healthy meals. Week 1: Learn how to make from scratch a delicious vegan curry, using ethically sourced, high quality ingredients. Week 2: With a step by step guide you will learn to make a delicious and healthy vegan ramen. This course will run from 18:00 to 21:00 and there will be £10 fee for materials.
