You want to learn specialist industry skills whilst working alongside your studies.
2 GCSEs at grade D or above are essential - however, applicants with relevant prior experience but without the stated qualifications will be considered, and must be prepared to work towards a level 2 functional skills qualification in English and Maths.
The overall butchery apprenticeship training provision focuses on enhancing the learner's ability to practice specialist industry skills and to consistently demonstrate appropriate levels of competence. This is delivered with the ongoing support of our dedicated team members, offering guidance to both the learner and the employer.
• Emergency First Aid Certificate
• Level 2 in Food Safety
• Level 2 in Health and Safety
• Butchery Skills (knife cutting skills)
• Functional Skills or Key Skills (where appropriate)
• Employer Rights and Responsibilities
Level 2 Certificate for Proficiency in Meat and Poultry, with choices offered in:
- Meat and Poultry Processing Skills
- Butchery Retail Skills
As part of the underpinning structure, we actively encourage our apprentices to participate in our educational visits to an:
- Livestock farm
- Abattoir ~ to reflect on the wider process 'from farm to fork'
- Cutting plant ~ to witness the butchery process on a large scale
The above is intended to give support, aiding the learner's principal understanding towards animal welfare, the slaughter process, meat hygiene regulations and the grading of differing carcasses.
Progression and achievement is primarily structured through the collection of project evidence, short course certificates, witness testimonies, observations and direct questioning techniques. A judgement is then made to determine the individual's overall knowledge, practical skill and capability.
Butchery apprenticeships are primarily undertaken at the learner's workplace, with college attendance through block release.
On successful completion you can commence work in the industry using your practical butchery skills or explore further education opportunities.
