If you can’t get enough of cakes, pastry, bread and you have your heart set on becoming a Patisseire this is the course for you to hone your skills using a selection of techniques building on your existing knowledge, to enable advanced techniques.

The first thing you’ll notice about this course is that it’s about practical learning – you’ll be spending a lot of time in our dedicated pastry kitchen, preparing a range of delicious baked goods, which can be sold in our little shop.

You’ll be looking at everything and producing delights from the world of pastry: fermented dough and batter products, petits fours, paste products, hot cold and frozen desserts, biscuit cake and sponges, chocolates, and as you progress, you can let your imagination run wild and produce a showpiece. To get you ready and prepared for work you will also undertake food safety supervision, supervision in the professional kitchen, sustainability and gastronomy.

  What You Will Learn

This one-year programme will give you advanced terminology and skills used in the professional kitchen, you will learn advanced techniques and processes and delve into the world of gastronomy with a fayre. This is where you can explore the food and heritage of another country.

  Entry Requirements

This qualification is for you if you are 16 or over and want to work as a chef in the pastry section of a professional kitchen. You are likely to have previous experience and/or a relevant level 3 qualification in cookery, such as the City & Guilds Level 3 Advanced Technical Diploma in Professional Cookery

  Work Experience

Nathan Outlaw, Paul Ainsworth and Gidley Park are examples of where our students have undertaken Work Experience. This is your chance to shine and maybe secure employment at the end of the course. After finishing this course the world is your oyster!


You will be assessed by assessment outcomes and will be set mini milestones throughout the year that cover the breadth of the qualification which concludes with a theory exam, which is externally set and externally marked and a synoptic assignment which incorporates all you have learnt from the planning through to the delivery of a range of pastry delights, that showcases your understanding and learning.


Once you’ve finished the Level 3 advanced course course, you’ll have a real understanding of this discipline and you can move onto a Higher education or a Level 4 Hospitality Manager Apprenticeship or you could enter employment as a first commis chef or a pastry chef within the pastry section of high end establishments, such as: Fine dining restaurants, Michelin star/Rosette restaurants, Luxury hotels, Cruise liners, Chocolatiers. Ben studied professional cookery and after travelling the world, he has settled down in Cornwall working as the Executive Chef at The Longstore. One of his most memorable experiences at Cornwall College was being nominated for a City and Guilds achievement award by his lecturer. He went on to win the award, attending the presentation at Buckingham Palace.

"The course covered all areas needed to equip me with the knowledge to enter a professional kitchen. I traveled around the world with the skills I had learnt. I settled back down in Cornwall and have worked my way up to executive chef, overseeing 3 kitchens. I write menus, train staff, team building and quality control of all sites."

This course is ideal if you have a passion for the food, drink Industry, and enjoy working as part of a hospitality team. Completing this course is your first step to working in a professional kitchen or restaurant The course covers all the basic duties to become a chef, from maintaining a safe working place to preparing and cooking food items. You will get real-life experience working and learning in our professional kitchens and contribute towards providing food in our restaurants. You will be assessed throughout the course to check on your progress. The course consists of knowledge tests and ongoing practical assessments throughout the year. You will need to pass all assessments to gain the qualification and maintain 90% attendance on the course.
