Apprentice cooks up a storm
Head Chef Stephen Barrett is used to dishing out the orders to his kitchen staff. But soon he'll be crying 'Yes Chef!' to apprentice Sarah Francis as she takes over the pots and pans at the St Agnes Hotel next week.
Sarah is a Level 3 Catering Apprentice with Cornwall College Business and is joining in the celebrations for National Apprenticeship Week (Monday 6th-Friday 10th February). Sarah will be finding out exactly what life in the top chef job is like as she plans and manages a special Italian themed evening at The St Agnes Hotel.
Sarah has used her apprenticeship training to craft a special menu that includes ‘Aggie Style’ Antipasti, Slow Roasted Porketta and Classic Italian Tiramisu. Sarah has been training as an apprentice for three years, starting her training at Jamie Oliver’s “Fifteen” and now working under Stephen Barrett, a former employee of Buckingham Palace.
Sarah said, ‘I have found apprenticeship training very beneficial for my career and am very lucky to learn from such talented chefs. My college education has also been a very valuable part of my training and I am already passing on my knowledge to the pupils of Penair Secondary School. I am very excited to get the opportunity to take charge for an evening as I hope to become a head chef in the future.’
Head Chef Stephen Barrett said, ‘It will be nice to step back and watch Sarah take control of my kitchen, as I feel she is ready to take the lead and show us her culinary ability.’
Julie Firth, Hospitality Liaison Officer from Cornwall College Business said, ‘Apprenticeship training is formed from a combination of work based training and learning from industry experts in the college environment. We are delighted that Sarah is taking a proactive role within her business and we look forward to seeing her career as a top chef progress.’
